Aloo jeera

Very easy to make & taste perfect with rice.  I like to serve this with curd rice in my busy days.  It taste really great and awesome traditional Indian dish.

Ingredients :
  1. Potatoes -  4 medium sized
  2. Oil - 1 tbsp
  3. Mustard seeds - 1 tsp
  4. Cumin seeds - 1 tsp
  5. Curry leaves - 1 tbsp
  6. Red chillies - 2 nos
  7. Ginger garlic paste -1 tsp
  8. Onion - 1 no
  9. Turmeric powder - 1/4 tsp
  10. Red chilly powder to taste
  11. Corriander powder - 1 tsp
  12. Cumin powder - 1/2 tsp
  13. Salt to taste

Direction to cook :

1.   Boil the potatoes & dice them.  Heat oil in the pan, add mustard seeds, cumin seeds, red chillies, curry leaves and chopped onions.  Saute till tender.

2.   Add turmeric powder, ginger garlic paste and salt.  Saute.

3.   Add red chilly powder, corriander powder, cumin powder & little water.  Saute till cooked.

4.   Add the potatoes & saute.  If needed, garnish it with finely chopped corriander leaves.

Potato Fry

Simple, quick & delicious side dish taste great with plain dal, tamarind rice, lemon rice or curd rice.

Ingredients :

  1. Potatoes - 3 nos
  2. Oil - 1 tbsp
  3. Mustard seeds - 1 tsp
  4. Urad dal - 1 tsp
  5. Curry leaves - 1 tbsp
  6. Red chillies - 2 nos
  7. Onion - 1 no
  8. Turmeric powder - 1/2 tsp
  9. Chilly powder to spice
  10. Salt to taste

Direction to cook :

1.   Heat oil in the pan, add mustard seeds, urad dal, red chillies, curry leaves & onion.  Saute till tender.

2.   Add sliced potatoes (lengthwise), turmeric powder, chilly powder & salt to taste.  Cover & cook till done.

3.   Add water if necessary.

Vegetable pulav

My comfort dish & the best way of adding the vegetable intake in the daily routine.   Very quick & simple to make.  I use store bought coconut milk for this preparation, so I diluted the thick milk to thin consistency by adding little water to it.  Green chillies brings the spicy taste to the dish.  I like to serve it with raita &  kuruma.  Any kind of seasonal vegetables can be used for this dish.  It taste yum :)

Ingredients :

  1. Basmati Rice - 1 cup
  2. Oil - 1 tbsp
  3. Ghee - 1 tbsp
  4. Cinnamon stick - 1 no
  5. Cloves - 3 nos
  6. Cardamom - 2 no
  7. Bay leaf - 1 no
  8. Onion - 2 nos
  9. Green chillies - 4 to 5 nos
  10. Mint leaves - 1/4 cup
  11. Corriander leaves - 1/4 cup
  12. Ginger garlic paste - 1 tbsp
  13. Vegetables (Carrot, beans, cauliflower, potato, green peas) - 1/2 cup
  14. Salt to taste
  15. Coconut milk - 11/2 cup
  16. Lemon juice - 1 tbsp
  17. Cashewnuts (roasted) for garnishing

Direction to cook :

1.   Heat 1 tbsp of ghee & roast the basmati rice slightly.  Keep aside.

2.   Heat oil in the heavy bottomed pan, add cinnamon stick, cloves, cardamom, bay leaf, green chillies & chopped onions.  Saute till tender.

3.    Add ginger garlic paste, mint leaves & corriander leaves.

4.    Add chopped vegetables & salt to taste.  Cook till tender.

5.   Add  coconut milk, lemon juice & the basmati rice.  Cook till done.

6.   Garnish with roasted cashewnuts.


Serve with raita.

Potato Masala (poori masala)

Simple & spicy curry made with smashed potatoes often served with dosa, chapathi or poori.  Any leftovers can be used as a stuffing inside the samosa or as the breakfast sandwiches.  Potato masala occupies the most prominent role in the south indian breakfast menus at home, hotel & in celebrations.  Its been little long time wish for my DH to serve him complete breakfast like dosa, potato masala, chutneys, sambar & vada for any weekends.  Hope I bring his dreams true shortly :)  

Ingredients :

  1. Potato - 2 large sized
  2. Oil - 1 tbsp
  3. Channa dal - 1 tsp
  4. Mustard seeds - 1 tsp
  5. Finely chopped ginger - 1 tsp
  6. Green chillies - 3 to 4 nos
  7. Curry leaves - 1 tbsp
  8. Onion - 2 nos
  9. Tomato - 1/2 
  10. Green peas (or) carrot - little less than 1/4 cup (optional)
  11. Turmeric powder - 1/4 tsp
  12. Chilly powder - 1/2 tsp (optional)
  13. Cashewnuts (roasted) - 1 tbsp
  14. Salt to taste
  15. Corriander leaves for garnishing

Direction to cook :

1.   Boil, peel & smash the potatoes.  Add salt & chilly powder (optional) and keep aside.

2.   Heat oil in the pan, add channa dal, mustard seeds, curry leaves, green chillies, chopped ginger & onions.  Saute till tender.

3.   Add green peas (or) carrot & turmeric powder.  Cook till done.  

4.   Add tomato & smashed potatoes.  Adjust the salt.  Cook for 5 mins on low-medium flame.

5.   Garnish with corriander leaves & roasted cashewnuts.


Serve warm.

Kheema potato fry

Mutton kheema can be cooked with all the vegetables.  Especially with potatoes are the best.  This can be served either dry or semi dry.  Perfect for rice and rotis. 

Ingredients :
  1. Mutton kheema - 500 gms
  2. Minced onion - 1 cup
  3. Potato - 1 no
  4. Cinnamon stick - 1 no
  5. Cloves - 3 nos
  6. Ginger garlic paste - 1 tsp
  7. Turmeric powder - 1/2 tsp
  8. Chilly powder - 1 tsp
  9. Oil - 1 tsp
  10. Salt to taste
  11. Corriander leaves for garnishing
Direction to cook :

£   Heat oil in the pan, add cinnamon stick, cloves & finely chopped onions.  Saute till golden brown.

£   Add ginger garlic paste & turmeric powder.  Add potatoes, chilly powder & salt to taste.

£   Add the kheema.  Cover & cook till done (or pressure cook them).



Garnish with corriander leaves & serve hot.

Aloo tikki

Perfect starter & this can be used as a patty for burger. 

Ingredients :
  1. Boiled potatoes - 2 nos
  2. Green chillies - 2 nos
  3. Corriander leaves - 2 tbsp
  4. Cumin powder - 1/2 tsp
  5. Kastoori methi leaves - 1 tbsp
  6. Chaat masala - 1 tsp
  7. Dry mango powder - 1/4 tsp
  8. Chilly powder - 1/2 tsp
  9. Onions - 1 no
  10. Minced ginger - 1/8 tsp
  11. Salt to taste
  12. Bread crumbs - 1/2 cup
  13. Oil for shallow frying
Direction to cook :

#   Grate the boiled potatoes & mix the other ingredients except the bread crumbs.

#   Divide the potato mixture into equal portions & make balls.  Flatten each balls between the palms into disc.

#   Roll the patties in the bread crumbs & shallow fry them in the oil on medium heat till golden brown & crispy on either sides.



Serve hot with tomato ketchup.

Potato Methi fry

Ingredients :
  1. Potato - 3 nos
  2. Methi (or kasturi methi) - 1 tbsp
  3. Onion - 2 nos
  4. Cinnamon stick - 1 no
  5. Cloves - 2 nos
  6. Chilly powder - 2 tsp
  7. Turmeric powder - 1/2 tsp
  8. Oil - 1 tsp
  9. Salt to taste
  Directions to cook :

#   Heat oil in the frying pan, add cinnamon stick & cloves.

#   Add finely chopped onions.  Saute till golden brown color.

#   Add turmeric powder, chilly powder & cubed potatoes.  Add salt.  Cover & cook till done.


#   Finally, add the methi leaves & roast them till we get the required consistency.

Serve with curd rice.

Potato green peas fry

Simple & easy dish will always taste great.  And this dish is the best example.  Potato green peas fry will taste yum with curd rice, tamarind rice, lemon rice & with sambar rice.


Ingredients :
  1. Potatoes - 3 nos
  2. Green peas - 1/2 cup
  3. Cinnamon stick - 1 no
  4. Cloves - 3 nos
  5. Onions - 2 nos
  6. Ginger garlic paste - 1 tsp
  7. Turmeric powder - 1/2 tsp
  8. Chilly powder - 1 tsp
  9. Salt to taste
  10. Oil - 1 tbsp
Directions to cook :

#   Heat the oil in the pan, add cinnamon stick & cloves.  Add the finely chopped onions and saute till golden brown.

#   Add ginger garlic paste, turmeric powder, chilly powder & green peas. 

#  Cut the potatoes in the desired shape & add them in the above mixture.  Add salt to taste.

#   Cover and cook till done.





















Serve warm with rice.

Potato Podimas

I love to eat & cook variety rices rather than full meals. It makes my day little simple & work free. Especially during the mornings, packing the lunch is the first thing to do. I prefer making lemon rice, tomato rice, curd rice, tamarind rice frequently with this yummy & delicious potato podimas. One among the few dishes which requires less ingredients yet taste great.

Ingredients :
  1. Potatoes - 4 large nos
  2. Turmeric powder - 1/2 tsp
  3. Chilly powder - 2 tsp
  4. Salt to taste
  5. Oil - 1 tbsp
  6. Finely chopped corriander leaves

Directions to cook :

£ Cook the potatoes in the boiling water.

£ Roughly smash the potatoes along with the turmeric powder, chilly powder & salt to taste. Set aside.

£ Heat oil in the non-stick pan, add the smashed potatoes. Cover and cook for 15 mins over low-medium flame.

£ Finally, add the finely chopped corriander leaves.

Serve warm.

Potato fry

Potato fry is my comfort dish. It taste great with rice & rotis as well. Very simple to make yet taste yummy :)
Ingredients :
  1. Potato - 250 gms
  2. Chilly powder - 2 tsp (as per ur spice level)
  3. Oil - 2 tsp
  4. Turmeric powder - 1/4 tsp
  5. Salt to taste

Directions to cook :

£ Peel off the potato skin & chop them into small cubes. Keep aside.

£ Heat oil in the heavy bottomed pan, add the chopped potatos & fry them till half cooked.

£ Add turmeric powder, chilly powder & salt. Fry them without adding any water till golden brown in color.

Serve with rice.
