Mini Muffins

Mini muffins r the best way to serve the kids. Especially during tea time, muffins r ideal. It involves less steps to follow.

Cornflour makes the muffins little crispy outside & soft outside. Crunchy with soft texture & small size invite us to have more & more.

Ingredients :
  1. All purpose flour - 125 gms
  2. Cornflour - 25 gms
  3. Baking powder - 2 tsp
  4. Egg - 1
  5. Sugar - 50 gms
  6. Milk - 100 ml
  7. Butter - 50 gms
  8. Vanilla extract - 1 tsp

Directions to bake :

# Melt & slightlly cool the butter.

# Sieve together flour, cornflour and baking powder.

# In a another bowl, mix together egg, sugar, milk, butter and vanilla extract.

# Gently fold the dry ingredients over the egg mixture & spoon mixture into the greased mini-muffin trays.

# Bake them at 200 C for 20 min or until well risen and brown.

# Remove muffins from the oven and cool them for atleast 5 mins.

Serve.

First time here. You have a cool blog. The muffins look yummy. Also luved the Banana fry. Reminds me of the Pazham pori[banana fry] we get in kerala.
