Sweet & sour mango chutney with cinnamon flavour

Mango3

I bought some raw mangoes last week.  This time, I wanna to try something new but sweet.  And, finally found some recipes with little modification my dish turned out really superb.  Sweet jaggery, sour mango with a pinch of cinnamon tasted delicious.  I had this with curd rice, rotis & with bread as well.  

Ingredients :
  1. Sour raw mango - 1 no
  2. Jaggery to taste ( I used little more than 1/2 cup)
  3. Water to cook the mango
  4. Cinnamon powder - 1/4 tsp

Direction to cook :

1.   Peel the skin of mango & cut them into cubes.

2.   Cover & boil the mango in the water till done.

3.   Add jaggery powder & cook for 5 more mins on medium flame.

4.   Finally, add cinnamon powder (or cardamom powder / cloves) & cook till the sauce is thick.

Serve it warm or cold.

Mango lassi & an award

Mango lassi is the perfect cooler for hot summer. Last weekend, I bought a tin of mango pulp to make some this delicious mango lassi.  Even fresh riped mangoes can be used.  Really tasty & easy to make.  Even bananas can be substituted with mangos.  During mango season, I make this very often.  This lassi is equally good served before, during or after a meal and can be easily doubled to serve more.

Ingredients :

  1. 1 ripe mango, peeled & chopped (or ) Mango pulp - 3/4 cup
  2. Plain Yogurt - 1 cup
  3. Milk - 3/4 cup
  4. Sugar - 3 tsp
  5. Nuts for garnishing

Blend all the ingredients (except the nuts) together in a blender to get a smooth mixture.  Garnish it with nuts & refrigerate.


Serve chill.

Mango thokku pickle

South India is popular for spicy pickles. Especially Andhra is meant for its varieties. Mango thokku pickle is one such variety. Last week I bought a real sour mango & made this spicy and hot mango thokku which goes good with curd rice, lemon rice, tamarind rice , rasam sadham .......

Mango thokku is very easy to make but be generous in using the oil. It remains fresh & tasty when stored in air tight container.

Ingredients :
  1. Sour mango - 1 medium sized
  2. Mustard seeds - 1/4 tsp
  3. Fenugreek seeds - 1/2 seeds
  4. Hing - a pinch
  5. Red chillies - 6 nos
  6. Curry leaves - 5 nos (optional)
  7. Oil - double the quantity of mango
  8. Salt to taste
Directions to cook :
# Dry roast the mustard seeds, fenugreek seeds with hing & red chillies seperately & allow them to cool.

# Once cool, combine & grind them all together.
.
# Meanwhile, peel the skin & grate the mango & keep aside.
.
# Heat oil in the pan, add curry leaves , grated mango, salt & the spice powder. Cook them for 15 min.
.
# Leave it cool & store it in the air tight container for long use.
.

Hot & spicy mango thokku pickle is ready to serve.

TIPS :

1. Use only the sour mangos. If desired, add mustard seeds along with curry leaves.

2. Adjust the spice level by using the pure red chilli powder.

3. Store it in the refrigerator.

4. 1 : 2 or 3 cups is the proportion to use (mango : Oil)
