Avial is the most popular kerala dish prepared with lotz of vegetables & coconut oil which adds flavour to the dish.  Healthy way of adding vegetables in the daily routine.  Tangy & creamy taste perfect with vathakuzhambu & adai.

Ingredients :

  1. Coconut oil - 1 tbsp
  2. Mustard seeds - 1 tsp
  3. Cumin seeds - 1 tsp
  4. Curry leaves - 1 tbsp
  5. Grated coconut - 1/4 cup
  6. Green chillies - 3 to 4 nos
  7. Sour curd - 1/4 cup
  8. Vegetables (Carrot, beans, yam, brinjal, cucumber, peas, pumpkin, drumstick, elephants foot, raw banana) - 1 cup
  9. Turmeric powder - 1/4 tsp
  10. Salt to taste

Direction to cook :

1.   Cook the vegetables & keep aside.

2.   Grind the grated coconut with green chillies & cumin seeds.  Keep aside.

3.   Heat oil in the pan, add mustard seeds & curry leaves.  Add the boiled vegetables & saute.

4.   Add the grounded paste, turmeric powder & sour curd.  Cover & cook over low flame.

Serve with rice or adai.

Banana Milk shake

Fruits intake is must & necessary in daily routine for its medical values. Best way is to have it directly but occasionally I prefer serving them little creamy & rich. Addition of vanilla icecream & a tsp of honey makes it taste awesome.

Sometimes, I alternate with the peanut butter instead of vanilla icecream & my son likes this combination. I am sure this would be the best refreshing drink for this hot summer.

Ingredients :

  1. Riped banana - 1 no
  2. Sugar to taste
  3. Milk - 2/3 cup
  4. Honey - 1 tsp
  5. Vanilla icecream - 1 scoop

Directions to blend :

  • Slice the bananas and add sugar, milk & honey.

  • Beat until the mixture is foaming.

  • Finally add a scoop of vanilla icecream & beat it just a second.

Serve it cool with icecubes.

Banana Dosa

I was really amazed to see & taste this simple, quick & tasty banana dosa first time. During my last month of pregnancy, my hubby gave me a treat to celebrate the coming of little one in Residency hotel. There, I had this dosa & got this recipe from the chef directly. I should thank them for sharing this recipe without any hesitation. It was the wonderful experience.

Then on, I frequently make this dosa for my breakfast. It is just mixing all the ingredients & cooking them. This is my comfort & favourite breakfast menu.

Ingredients :

  1. Riped bananas - 3 big sized
  2. Maida - 1/2 cup
  3. Rice flour - 1/4 cup
  4. Sugar - 1/4 cup (as per ur taste)
  5. Cashew nuts - 1 tbsp
  6. Ghee for frying

Directions to cook :

# Smash the bananas without any lumps. Chop the cashewnuts to tiny pieces.

# Combine all the ingredients together. Do not add water. Bananas will automatically releases some water.

# Heat the pan, spread the banana batter into a disc shape. Apply some ghee arround the edges. Cook till golden brown in either sides.

Serve warm.

Thai Fried bananas

Thai cuisine is famous for its addition of coconut in almost all the dishes. And fried bananas r the most popular & commonly eaten dessert which also includes shredded coconut as the main ingredient. It is very simple to make just like our bajji.

This is commonly served with the vanilla icecream or if not we can have it with our fav icecreams too. The split bananas r dipped in the prepared batter & deep fried it. Its a simple Thai dessert which taste heaven :)

Ingredients :
  1. Bananas - 3 nos
  2. Rice flour - 5 tbsp
  3. Tapioca starch - 2 1/2 tbsp (or use corn strach)
  4. Shredded coconut - 1/2 cup
  5. Sugar - 3 tbsp
  6. Sesame seeds - 1/4 tsp
  7. Salt - 1/2 tsp
  8. Baking soda - 1/4 tsp
  9. Water - little more than 1/4 cup
  10. Vegetable oil - 3 cups

Direction to fry :

# Spilt the banana length wise.

# Combine all other ingredients except vegetable oil & stir well till u get the thick consistency.
# Heat the vegetable oil in the frying oil.

# Now, dip the banana slices into the thick batter & deep fry them.

Serve them warm with vanilla icecream.

TIPS :

1. Dip the bananas very carefully in the batter, bcoz it tends to break into half.

2. The batter should be really thick, so that it would run in the oil while frying.
