Kuzhi Paniyaram

Kuzhi paniyaram is the most popular chettinad food served with hot and spicy chutneys.  I make this dish very rarely as it consumes more oil in the preparation.  Adding more vegetables, greens & lentils makes this dish little nutricious to the kids.  "Best dish for those who wants to gain weight" but it taste simply superb.

Ingredients :
  1. Dosa / Idly batter -  2 cups
  2. Finely chopped onion - 1 no
  3. Green chillies -2 to 3 nos
  4. Finely grated carrot - 1 small sized
  5. Curry leaves - 1 tbsp
  6. Coconut pieces - 1 tsp
  7. Oil - 1 tsp and for greasing the paniyaram mould
  8. Mustard seeds - 1 tsp
  9. Urad dal - 1 tsp
  10. Corrainder leaves - 1tsp
  11. Salt to taste
Direction to cook :

1.   Heat a tsp of oil in the pan, add mustard seeds, urad dal & curry leaves.  Add finely chopped onion & green chillies.  Saute till tender.

2.  To the dosa / idly batter, add the above seasonings.  And add the grated carrot, coconut pices, corriander leaves & salt to taste.

3.   Heat the paniyaram mould & grease it with oil.  Pour the batter in the each mould & cook on either side till golden brown in color.

Serve warm with spicy chutney.

Avial

Avial is the most popular kerala dish prepared with lotz of vegetables & coconut oil which adds flavour to the dish.  Healthy way of adding vegetables in the daily routine.  Tangy & creamy taste perfect with vathakuzhambu & adai.

Ingredients :

  1. Coconut oil - 1 tbsp
  2. Mustard seeds - 1 tsp
  3. Cumin seeds - 1 tsp
  4. Curry leaves - 1 tbsp
  5. Grated coconut - 1/4 cup
  6. Green chillies - 3 to 4 nos
  7. Sour curd - 1/4 cup
  8. Vegetables (Carrot, beans, yam, brinjal, cucumber, peas, pumpkin, drumstick, elephants foot, raw banana) - 1 cup
  9. Turmeric powder - 1/4 tsp
  10. Salt to taste

Direction to cook :

1.   Cook the vegetables & keep aside.

2.   Grind the grated coconut with green chillies & cumin seeds.  Keep aside.

3.   Heat oil in the pan, add mustard seeds & curry leaves.  Add the boiled vegetables & saute.

4.   Add the grounded paste, turmeric powder & sour curd.  Cover & cook over low flame.

Ajwain Chicken curry

South Indian dishes is something hot & spicy.  Ajwain chicken curry is most exotic dish taste good with rice , rotis & naans as well.  When I want to try out some new chicken dishes, I blindly follow the sanjeev kapoor's recipe.  Flavour of ajwain brings unique taste to this dish & we just loved it with rice :)

Ingredients :
  1. Chicken - 800 gms
  2. Oil - 4 tbsp
  3. Coconut, scrapped - 1 cup
  4. Garlic - 4 to 6 pods
  5. Turmeric powder - 1/2 tsp
  6. Onion - 2 nos
  7. Salt to taste
  8. Tamarind pulp - 1 tbsp
  9. Nutmeg grated - 1/4 tsp
  10. Corriander leaves for garnishing
Dry Roast the below ingredients :
  1. Red chillies - 4 nos
  2. Cumin seeds - 1 tsp
  3. Corriander seeds - 1 1/2 tbsp
  4. Black peppercorns - 10 nos
  5. Fennel seeds - 1 tsp
  6. Ajwain - 1 tsp
  7. Poppy seeds - 2 tbsp
  8. Cloves - 6 nos
  9. Cinnamon - 2 stick
  10. Star anise - 4 nos

Direction to cook :

1.   Lightly brown the scrapped coconut & grind it along with the garlic pods and the roasted ingredients.

2.   Heat oil in the frying pan, add onions & saute till tender.  Add chicken pieces & saute.

3.   Add the grounded coconut paste, turmeric powder, tamarind pulp & cook till done.

4.   Finally, add nutmeg powder & finely chopped corriander leaves.

Aval / Poha mixture

 Yesterday, my man came little early from work & that was the biggest surprise in this year beginning.  He asked me for something spicy & crispy snack along with tea.  Immediately, I started turning my cooking diary & finally ended up in making this crispy & spick aval mixture.  It just took 15 mins to make & it was the best evening yesterday :)

Ingredients :
  1. Thin Aval / Poha - 1 1/2 cup
  2. Cumin seeds - 1 tsp
  3. Channa dal - 1 tsp
  4. Green chillies - 5 to 6 nos
  5. Chilly powder - 1/4 tsp (optional)
  6. Curry leaves - 1 tbsp
  7. Fried groundnut - 1 tbsp
  8. Fried cahewnuts
  9. Fried chana dal / Pottukadalai - 1 tbsp
  10. Oil - 1 1/2 tsp
  11. Coconut grated / Dessicated coconut powder - 1 tsp
Direction to cook :

  Heat oil in the frying pan, add cumin seeds, channa dal, green chillies & curry leaves.

#   Then add fried chana dal & aval.  Fry till crispy.

#   Finally add the remaining ingredients & fry for 2 mins on low flame. (dont roast too much)



Store it in airtight container.

Coconut chutney

Ingredients :
  1. Coconut grated - 1 cup
  2. Green chillies - 4 nos
  3. Urad dal - 1 tbsp
  4. Oil - 1 tsp
  5. Tamarind - 1/2 tsp
  6. Salt to taste
  7. Water 
Directions to cook :

#   Heat oil in the kadai & add urad dal.

  Grind coconut, urad dal, green chillies, tamarind & salt together.

Serve with pongal.

Vegetable kuruma

During the weekends, I always find some vegetables left over in my fridge. I either make vegetable curry or spicy vegetable kuruma. This is one of my comfort dish, which taste great with coconut rice and dosas as well. Addition of lotz of vegetables & coconut makes this dish rich and healthy. And this is one among of few dishes where any kind of vegetables can be added in any proportions. Great dish for the lazy weekends :)

Ingredients :
  1. Vegetables ( carrot, beans, cauliflower, capsicum, green peas, turnip, potato & ur favourite) - 1 cup
  2. Onion - 1 large sized
  3. Tomato - 1 large sized
  4. Chilly powder - 2 tsp
  5. Mint leaves - 1 tbsp
  6. Cinnamom stick - 1 no
  7. Cloves - 3 nos
  8. Cardamom - 1 no
  9. Bay leaf - 1 no
  10. Ginger garlic paste - 1 tbsp
  11. Turmeric powder - 1/4 tsp
  12. Coconut paste - 2 tbsp
  13. Water - 1 cup
  14. Salt to taste
  15. Oil - 1 tbsp
  16. Corriander leaves for garnishing

Directions to cook :

# Cut the vegetables evenly & keep aside.

# Heat oil in the pan, add cinnamon stick, cloves, cardamom, bay leaves & finely chopped onions. Saute till golden brown color.

# Add ginger garlic paste & mint leaves. Saute it for 3 mins.

# Add finely chopped tomatoes, chilly powder, turmeric powder & salt to taste. Saute it for 4 mins.

# Add the vegetables & water. Cover and cook till tender.

# Add coconut paste & cook for 5 min on low-medium flame.

Garnish with corriander leaves & serve with rice or rotis too.

Madrasi chicken

My hubby asked me to do something new in chicken, which I never tried before. And, he himself browsed the Internet & gave this wonderful recipe to cook for our weekend lunch. Though, the list of ingredients is little big, yet simple to make & taste awesome.

Ingredients :
  1. Chicken - 1 kg
  2. Curd - 2/3 cup
  3. Turmeric powder - 1/4 tsp
  4. Chilly powder - 2 tsp
  5. Garlic paste - 1 tsp
  6. Lemon juice - 1 tsp
  7. Bay leaf - 1
  8. Cinnamon - 1 stick
  9. Cloves - 3 nos
  10. Black pepper - 1 tsp
  11. Onions - 1 cup
  12. Grated coconut - 2 tsp
  13. Tomatoes - 1 cup
  14. Corriander leaves
  15. Oil - 2 tbsp
  16. Salt to taste

Directions to cook :

£ Clean & marinate the chicken in curd, turmeric powder, chilly powder, garlic paste, salt & lemon juice for atleast one hr.

£ Heat 1 tbsp of oil in the pan, add bay leaf, cinnamon, cloves, black pepper, onions & saute.

£ Add tomatoes & grated coconut & saute till cooked. Allow it to cool & grind them to the fine paste.

£ Heat 1 tbsp of oil in the pan, add the grinded masala & the chicken along with the marinated masala. Ajust the salt. Cover and cook until tender.

£ Finally, add the corrainder leaves & serve warm.

Perfect for rotis.

Coconut chutney & an award

Coconut chutney is the most popular & frequently made dip in the south India. Simple and delicious which taste good with idlies, dosa, pongal, vada &along with sambar.

I like the seasoned red chillies, when we squeeze that it releases the juice which taste great with chutney. Enjoy this :)

Ingredients :
  1. Coconut pcs - 1 cup
  2. Roasted gram dal - 1/4 cup
  3. Green chilly (or) Red chillies - 3 to 4 nos
  4. Ginger - a small piece
  5. Tamarind pulp - 1 tsp
  6. Water to grind - approx 1/2 cup
  7. Salt to taste

For seasoning :

  1. Mustard seeds - 1 tsp
  2. Urad dal - 1 tsp
  3. Curry leaves - 1 tbsp
  4. A pinch of hing
  5. Oil - 1 tsp
  6. Red chillies - 2 nos

Directions to grind :

# Combine all the ingredients together (expect seasoning ingredients ) and grind them to a fine smooth paste, adding water little by little.

# Heat oil in the kadai, add mustard seeds & let them splutter. Add urad dal, red chillies, curry leaves and a pinch of hing.

# Finally, add the seasonings in the grinded chutney & serve.

Serve with idlies and dosas.
