Chocolate chip Muffins

It's been long time since I posted.  I'm back with delicious & perfect breakfast menu chocolate chip muffins.  Even blueberries can be used instead of chocolate chips.  A cup of tea/coffee are good accomplishment & kids will enjoy having this at any time.   

Ingredients :

  1. All purpose flour - 2 cups
  2. Unsalted butter - 1/2 cup
  3. Sugar - 1 1/4 cups
  4. Baking powder - 1 1/4 tsp
  5. Salt - 1/2 tsp
  6. 2 large eggs
  7. Milk - 1/2 cup
  8. Vanilla extract - 2 tsp
  9. Chocolate chips - 1 cup
Direction to bake :

1.   Preheat the oven at 375 C.  Prepare the muffin cups & set aside.

2.   Sieve the flour, baking powder & salt.

3.   Beat the butter & sugar until light and fluffy.  Add egg, one at a time, beating until combined.  Mix in  vanilla extract.


4.   Add the flour & milk alternatively to the above mixture, beating until well combined.  Fold in the chocolate chips in the batter.

5.   Divide the batter evenly among the prepared muffin cups & bake it for 30 mins or until golden brown.


Serve.

Vanilla crumb muffins

Last weekend we had small get-together ladies party at one of my friends house.  Party was decided & executed within 2 hours time.  Immediately, I decided to bake these vanilla crumb muffins & that was done within one hour time.  The crumb topping is what makes these Vanilla muffins stand apart from the ordinary. They're scrumptious!"

Ingredients :

  1. All purpose flour - 2 cups
  2. Sugar - 3/4 cup
  3. Egg - 1 no
  4. Baking powder - 2 tsp
  5. Baking soda - 1/2 tsp
  6. Milk - 1 cup
  7. Vanilla essence - 2 tsp
  8. Vegetable oil - 1/3 cup
  9. Nuts (almonds, raisins, walnuts) - 1/2 cup
  10. Brown sugar - 2 tbsp
  11. Cinnamon powder - 1/2 tsp


Direction to bake :

1.  Preheat oven to 400 degrees F (200 degrees C). Lightly grease the muffin cups, or line with muffin papers.

2.    In a large bowl, mix together  flour, baking soda & baking powder. In another bowl, beat together sugar, egg, milk vanilla essence and vegetable oil. Stir the liquid mixture into the flour mixture just until moistened. Spoon batter into prepared muffin cups.

3.   In a small bowl, mix together brown sugar & cinnamon  powder. Sprinkle topping over muffins.


4.   Bake in preheated oven for 18 to 20 minutes, until a toothpick inserted into center of a muffin comes out clean.

Fluffy muffins with chocolate chips topping

Anytime I bake muffins, it will turn out to be the best.  When I was searching for the vegetables for preparing my breakfast, I saw the tiny little chocolate chips hidding behind the shelf.  Muffins with a cup of tea is my favourite breakfast & evening snack.  I dont want to mix the chocolate chips in the muffin batter rather I used it as my topping for this fluffy & spongy muffins yesterday.  It's lovely  :)

Ingredients :
  1. All purpose flour -2 cups
  2. Baking powder - 1 tsp
  3. Salt -1/2 tsp
  4. Butter (unsalted) - 1/2 cup Melted & cooled
  5. Eggs - 2 large
  6. Milk - 1 cup
  7. Vanilla extract - 2 tsp
  8. Sugar - 2/3 cup
  9. Chocolate chips (milk or semi-sweet) - 1 cup

Direction to bake :

#   Preheat the oven to 400 F & grease your muffin pan.

#   Sieve together the flour, baking powder & salt. 

#   In a large bowl, whisk together the eggs, sugar, milk & vanilla extract.

#   Using the rubber spatula, fold the wet ingredients along with the melted butter into the dry ingredients.

  Pour the batter into the muffin pan, filling each cup 2/3 rd full. 

  Bake for 25 mins or until muffins turns golden brown.  Sprinkle the semi melted chocolate chips on the top & allow it to cool.

Mini Muffins

Mini muffins r the best way to serve the kids. Especially during tea time, muffins r ideal. It involves less steps to follow.

Cornflour makes the muffins little crispy outside & soft outside. Crunchy with soft texture & small size invite us to have more & more.

Ingredients :
  1. All purpose flour - 125 gms
  2. Cornflour - 25 gms
  3. Baking powder - 2 tsp
  4. Egg - 1
  5. Sugar - 50 gms
  6. Milk - 100 ml
  7. Butter - 50 gms
  8. Vanilla extract - 1 tsp

Directions to bake :

# Melt & slightlly cool the butter.

# Sieve together flour, cornflour and baking powder.

# In a another bowl, mix together egg, sugar, milk, butter and vanilla extract.

# Gently fold the dry ingredients over the egg mixture & spoon mixture into the greased mini-muffin trays.

# Bake them at 200 C for 20 min or until well risen and brown.

# Remove muffins from the oven and cool them for atleast 5 mins.

Serve.

Chocolate chip muffins

When it comes to baking, my first preference would be muffins. Only baking which never went wrong from the day one till now is this soft and fluffy muffins. I tried variety of combinations & it really turned out great & appreciable.

Chocolate chip muffins are the most popular combination accepted & baked world wide. This is simple & easy to make, which taste really yummmmmm....

I like to bake this muffins especially during morning & serve them as the breakfast along with a cup of coffee. Also share ur opinion "how to start the breakfast little different ?"

Ingredients :

  1. All purpose flour - 1 3/4 cup
  2. Sugar - 3/4 cup
  3. Egg - 1 no
  4. Brown sugar - 1 tsp
  5. Baking powder - 2 tsp
  6. Baking soda - 1/2 tsp
  7. Salt - 1/2 tsp
  8. Cocoa powder - 2 tbsp
  9. Semi sweet chocolate chips - 1 cup
  10. Milk - 1 cup
  11. Vanilla essence - 1 tsp
  12. Vegetable oil - 1/3 cup

Directions to bake :

  • # Combine & sieve the flour, sugar, baking powder, baking soda & salt together.

  • # Beat the egg & brown sugar till creamy & fluffy.

  • # Add vegetable oil & vanilla essence to the egg mixture & mix well.

  • # Fold the dry ingredients to the egg mixture & alternative the milk. Finally end with the dry ingredients.

  • # Gently mix the chocolate chips into the cake mixture.

  • # Pour the cake mixture to the greased muffin pan & bake it for 20 min at 200 C.

Perfect for evening snacks.
