Mango thokku pickle

South India is popular for spicy pickles. Especially Andhra is meant for its varieties. Mango thokku pickle is one such variety. Last week I bought a real sour mango & made this spicy and hot mango thokku which goes good with curd rice, lemon rice, tamarind rice , rasam sadham .......

Mango thokku is very easy to make but be generous in using the oil. It remains fresh & tasty when stored in air tight container.

Ingredients :
  1. Sour mango - 1 medium sized
  2. Mustard seeds - 1/4 tsp
  3. Fenugreek seeds - 1/2 seeds
  4. Hing - a pinch
  5. Red chillies - 6 nos
  6. Curry leaves - 5 nos (optional)
  7. Oil - double the quantity of mango
  8. Salt to taste
Directions to cook :
# Dry roast the mustard seeds, fenugreek seeds with hing & red chillies seperately & allow them to cool.

# Once cool, combine & grind them all together.
.
# Meanwhile, peel the skin & grate the mango & keep aside.
.
# Heat oil in the pan, add curry leaves , grated mango, salt & the spice powder. Cook them for 15 min.
.
# Leave it cool & store it in the air tight container for long use.
.

Hot & spicy mango thokku pickle is ready to serve.

TIPS :

1. Use only the sour mangos. If desired, add mustard seeds along with curry leaves.

2. Adjust the spice level by using the pure red chilli powder.

3. Store it in the refrigerator.

4. 1 : 2 or 3 cups is the proportion to use (mango : Oil)
