Instant Raagi Dosa

Raagidosa1

Ingredients :

  1. Raagi flour - 1/4 cup
  2. Dosa / Idli batter - 1 cup
  3. Salt (If necessary)
  4. Oil 
Direction to cook :

1.   Mix the raagi flour with the dosa/idli batter.  Add water & salt to get desired consistency.

2.   Heat the pan, take a dollop of batter & make a circle.  Sprinkle some oil arround the dosa.

Chow Chow Kootu

Ingredients :

  1. Chow chow - 2 medium sized 
  2. Dal (Moong dal / channa dal)
  3. Oil - 2 tbsp
  4. Mustard seeds - 1 tsp
  5. Cumin seeds - 1 tsp
  6. Curry leaves - 1 tbsp
  7. Red chillies - 5  nos
  8. Onion - 1 no
  9. Garlic - 5 pods
  10. Tomato - 1 no
  11. Cumin powder - 1 tsp
  12. Coconut paste - 1 tbsp
  13. Salt to taste

Direction to cook :

1.   Pressure cook the dal.  Boil & cook the chow chow till tender.

2.   Heat oil in the pan, add mustard seeds, red chillies, cumin seeds & curry leaves.  Add finely chopped onion, garlic and saute.

3.   Add tomato pieces  & saute.  Add cumin powder, coconut paste & salt to taste.

4.   Add the cooked dal & chow chow.  Cook for 5 more mins over low flame.

5.   Add some ghee before serving.

Walnut Crunch Cake

Ingredients :

Topping :

  1. Brown sugar - 3/4 cup (150 g)
  2. All purpose flour - 1/3 cup (50 g)
  3. Cold butter, cut up - 1/4 cup (60 g)
  4. Walnuts, coarsely chopped - 3/4 cup ( 90 g)
Cake :
  1. All purpose flour - 2 cups (300 gms)
  2. Baking powder - 2 tsp
  3. Nutmeg - 1 tsp
  4. Salt - 1/4 tsp
  5. Butter - 1/2 cup (125 g)
  6. Brown sugar - 3/4 cup (150 g)
  7. Vanilla extract - 1 tsp
  8. Large eggs - 4 nos
  9. Milk - 3/4 cup ( 180ml)

Method :

1.   Preheat the oven to 180C.  Lightly grease and flour a 9 inch bundt pan.

2.   To prepare the topping, stir the brown sugar and flour in a medium bowl.  Use a pastry blender to cut in the butter until the mixture resembles fine crumbs.  Stir in the walnuts.

3.   To prepare the cake, stir the flour, baking powder, nutmeg, and salt in a medium bowl.  Beat the butter, brown sugar, and vanilla in a large bowl with an electic mixer at medium speed until creamy.  Add the eggs one at a time, beating until just blended after each addition.  With mixer on low speed, gradually beat in the dry ingredients, alternating with the milk.

4.   Spoon half the batter into the prepared pan.  Sprinkle with half the crunch mixture.  Spoon the remaining crunch mixture.  Bake for 50-60 mins or until golden brown.

Plain Dal Curry

Ingredients :
  1. Toordal - 1 cup 
  2. Oil - 1 tbsp
  3. Mustard seeds - 1 tsp
  4. Urad dal - 1 tsp
  5. Red chillies - 3 nos
  6. Curry leaves - 1 tbsp
  7. Onion - 1 no
  8. Tomato - 1 no
  9. A pinch of hing
  10. Green chillies - 3 to 4 nos
  11. Garlic - 2 pods
  12. Turmeric powder - 1/4 tsp
  13. Corriander leaves for garnishing

Direction to cook :

1.   Heat oil in the pan, add mustard seeds, urad dal, hing, red chillies, curry leaves & finely chopped onion.  Saute.

2.  Meanwhile cook the dal along with the tomato, green chillies, garlic pods & turmeric powder.  Smash it.

3.   Once the onion is cooked, add the dal & salt to taste.  Garnish it with corriander leaves & serve.

  1. Yam - small sized
  2. Oil for deep frying
  3. Chilly powder to spice 
  4. Tamarind extract (concentrated) - 1/4 tsp
  5. Salt to taste
  6. Turmeric powder

Direction to cook :

1.   Combine the yam pieces, turmeric powder, chilly powder, tamarind extract & salt to taste.  Now cook (either pressure cooker or microwave) the yam mixture.

2.   Heat the oil and deep fry the cooked yam pieces till crispy.

Ingredients :
  1. Boiled eggs - 3 nos
  2. Onion - 2 nos
  3. Oil - 1 tbsp
  4. Mustard seeds - 1 tsp
  5. Curryleaves - 1 tbsp
  6. Ginger garlic paste - 1 tsp
  7. Green chillies - 2 nos
  8. Tomatos - 1 no
  9. Chilly powder - 1 tsp
  10. Coriander powder - 1 tsp
  11. Turmeric powder - 1/2 tsp
  12. Garam masala - 1 tsp
  13. Salt to taste
  14. Corriander leaves - for garnishing

Direction to cook :

1.   Heat oil in the pan, add mustard seeds, curry leaves, ginger garlic paste, green chillies & sliced onions.  Saute till tender.

2.   Add turmeric powder, chilly powder, coriander powder, salt & tomatoes.  Saute.

3.   Add garam masala, boiled eggs.  Cook for few mins.

4.   Finally, garnish it with corriander leaves.

Ingredients :
  1. Bread slices - 6 nos
  2. Milk - 3/4 cup
  3. Egg - 1 no (lightly beaten)
  4. Sugar to taste
  5. Black pepper powder or Zimt or vanilla essence - 1 tsp
  6. Oil for frying
Direction to cook :

Combine together the milk, egg, sugar & black pepper powder.  Heat the pan, dip the bread slices in the egg mixture.  Drizzle some oil & cook the bread slices till done.

Eggplant curry - Andhra style

Ingredients :
  1. Eggplant - 1 no
  2. Oil - 1 tsp & for frying
  3. Red chillies - 3 nos
  4. Mustard seeds - 1 tsp
  5. Cumin seeds -1 tsp
  6. Onion - 2 no
  7. Curry leaves - 1 tbsp
  8. Green chillies - 2 nos
  9. Ginger garlic paste - 1 tsp
  10. Turmeric powder - 1/2 tsp
  11. Tomatoes - 3 nos
  12. Corriander powder - 1 tsp
  13. Chilly powder - 1/2 tsp
  14. Salt to taste
  15. Peanuts, roasted - 1 tsp
  16. Sesame seeds, roasted  -  1 tbsp
Direction to cook :

1.   Heat oil in the frying pan & deep fry the cubed eggplants till golden brown in color. Drain the excess oil in the kitchen tissue.

2.   Heat 1 tsp of oil, add red chillies, mustard seeds, cumin seeds, curry leaves, ginger garlic paste, finely chopped onions & salt to taste.  Saute till tender.

3.   Add turmeric powder, chilly powder, finely chopped green chillies, corriander powder and finely chopped tomatoes.  Saute for 5 mins.

4.   Add fried eggplant & stir fry it.

5.   Meanwhile, grind the roasted peanuts and sesame seeds to fine powder.  And add them to the eggplant mixture & fry them till done.

Serve it with rice.

Simple vegetable sandwich

Quick & simple sandwich which taste delicious & perfect breakfast menu.

Ingredients :
  1. Bread slices - 6 slices 
  2. Tomato ketchup
  3. Mayonnaise
  4. Mint chutney
  5. Onion slices
  6. Tomato slices
  7. Capsicum slices
  8. Cucumber slices

Method :

1.   Spread the tomato ketchup, mint chutney in two slices of bread.

2.   Now fill the onion, tomato, capsicum, cucumber slices & mayonnaise between the bread slices & toast it in the sandwich maker till done.

Serve immediately.

Black forest cake

Ingredients :
  1. All purpose flour - 1 cup
  2. Unsweetened cocoa powder - 1/3 cup
  3. Baking powder - 1/2 tsp
  4. Baking soda - 1 tsp
  5. Salt - 1/4 tsp
  6. Sugar - 1 cup
  7. Milk - 1/2 cup
  8. Vinegar - 1/2 tbsp
  9. Egg - 1 no
  10. Vegetable oil - 1/4 cup
  11. Strong coffee - 1/2 cup
  12. Vanilla extract - 1/2 tsp 
  13. Cherries - 1 can ( drain the cherries & retain the syrup)
  14. Whipping cream - 1 cup
  15. Vanilla essence - 1/2 tsp
  16. Powdered sugar (Icing sugar) - 1 tbsp
  17. Chocolate flakes & glaced cherries for decoration

Method :

1.   Preheat the oven at 180 C.  Grease & line up the baking pan with the parchment paper.

2.   Mix together the milk & vinegar & set aside.

3.   Sieve together the flour, cocoa powder, baking powder, baking soda & salt.

4.   In a another bowl, whisk together the egg, oil, coffee & vanilla essence.  

5.   Stir in the milk mixture  & then the flour mixture gently.  Pour the batter in the prepared pan & bake it for 30 mins or until done.  Allow it to cool completely.

6.  Cut the cake horizantally & brush the first half with the syrup preserved. 

For the whipping cream :

7.   Beat together the whipping cream, vanilla essence & powdered sugar until soft peaks.

8.   Now spread the cream between the layer, sides & over the cake.

9.   Finally, decorate the cake with the chocolate flakes & glaced cherries.

10.  Refrigerate the cake for atleast one hour before serving.
